My kids make these biscuits every year to take to school as an end of term treat, they don’t need any special equipment and use ingredients readily available in the supermarkets. For younger children or as a time saver you can use any ready made round biscuit as a base and just do the decorating part, however the cinnamon biscuits are easy to make and really tasty so I would encourage you to give them a try.

Cinnamon Biscuit Recipe
Ingredients
275g plain flour
1 dessertspoon ground cinnamon
1 level teaspoon baking powder
100g soft brown sugar
75g butter (room temperature)
1 egg
50g golden syrup
Method
Measure the flour, cinnamon & baking powder into a large bowl.
Whisk together to combine with a small hand whisk.
Add the sugar.
Whisk again and make sure the lumps from the sugar are crumbled well into the dry ingredients, you can use your fingers for this part.
Add the butter in chunks.
Use the tips of your fingers to rub the butter and flour together – this is called rubbing in – you are aiming to combine the butter with the flour until it is all incorporated and looks like fine bread crumbs.
The egg needs to be beaten which can be done in a bowl with a fork or I like to pop the egg into a screw top container and give it a good shake.
Add the egg to the dry ingredients and combine with a wooden spoon.
Add the golden syrup to the mixture. A good way to get the syrup out of the tin is to put a metal spoon into a cup of boiled water then into the syrup you will find it slides off the spoon easily into the mixture.
Continue to stir with a wooden spoon then use your hand to bring the mixture into a ball of dough.
Put it in a plastic bag and put in the fridge for half an hour.
When the half hour is up flour a board. Break the dough in half (its easier to handle this way) knead slightly to soften it up.
Roll out to an even 3mm (roughly!) thickness.
Cut circles out using a 8cm pastry cutter or a large glass.
I use non stick silicon sheets but non stick baking paper is just as good, you should get around 24 biscuits, just keep re-rolling the mixture until its all gone. I use two large baking sheets to put my silicon sheets onto. You now need to pop these back in the fridge for 20mins. All the chilling really helps keep a good shape to the biscuits so try not to skip this stage.
Whilst the cut out biscuits are chilling preheat the oven to 160C ( fan) 170C oven gas mark 3.
Bake the biscuits for 15/20 minutes until turning golden brown.
Remove from the oven and use a pallet knife to move onto a wire rack to cool.
To decorate the biscuits:
You will need :
Coloured icing tubes
Strawberry laces or fizzy laces sweets
1 packet orange TicTacs
24 white marshmallows
200g icing sugar
2 tablespoons warm water
Firstly make the icing by combining the icing sugar with the water added one spoon at a time, stir well until it reaches a thick but ‘drizzlable’ mixture ( like double cream)
Top each biscuit with 1 teaspoon of icing , dollop it in the middle then use the spoon to ease it out to the edges to form a puddle shape.
Repeat with all the biscuits
To make the snowman head you will need to pierce the marshmallow with a skewer first the stick in the TicTac to make the nose. Push it in quite far as they tend to ease out after a little while.
Put this on top of the icing and wrap a length lace around the ‘neck’
Pipe on two black dots for eyes
Then 3 further dots for buttons onto the icing
Repeat to make your Cinnamon Snowman Army
